Tom and I are on a bit of a health kick, trying to match our love of food and cooking with a healthier, fresher take on it. So, tonight’s dinner was oven-baked mackerel with a spicy aubergine and red pepper sauce. Click here for the recipe
This is a really easy dish to do, especially if you have other things to be getting on with, once you’ve made the basis of the sauce, and have the aubergines and peppers in the oven you can leave it for a good 20 minutes.
I added a couple of red peppers to the sauce as we’d bought a load from Borough Market at the weekend. They’re so much better value for money and they taste and smell so much fresher when bought straight from the growers. I always come back laden down with fruit and veg from my favourite stall at the market!
You could add other veg to the sauce like courgettes and mushrooms, but it is just as nice to keep it simple with the aubergine and tomatoes in the sauce.
Also, the choice of fish could be swapped – we tried pouting for the first time last week and it was delicious. Similar to cod but cheaper, I think it’s just as nice.
Tom did the fish in the oven with a pinch of salt and pepper, and some lemon – delicious!
